     "What Makes
AC LaRocco Pizzas Unique?" 

“This Frozen Pizza Tastes Fresh Baked”. (#1 customer comment) AC LaRocco pizzas are assembled in a frozen physical state using “freshly frozen vegetables” to savor the nutritional factors of freshness and flavor. 

AC LaRocco’s unique whole wheat & honey crust is quickly frozen to -10 degrees after its partial bake cycle is completed. As each pizza is assembled, all items are applied frozen except for the sauce and the cheese which are applied at 32-35 degree holding temperature. Within a couple of minutes, they too become frozen. It is from the finished frozen physical state that the crust & toppings have been carefully formulated to provide a delicious and tender fresh baked pizza.. . baked in the home oven. The crust will expand and complete its browning cycle while the cheese melts and the topping steams to freshness.

"What About The Salt Content?"

AC LaRocco was compared to 42 other frozen pizzas and declared the lowest in Sodium of all other popular brands. While it is necessary to use a small amount of salt in our formula, particularly in the organic whole wheat crust, we have found that by using “Sea Salt” we can provide our customers with natural minerals that are not available in table salt.

"What Does "Fresh Frozen Vegetables" Mean?"

Fresh Frozen Vegetables are frozen with in 2 to 4 hours from harvest. The nutrients and flavors are  locked in during the process and the ingredients remain frozen until baked by the consumer moments before serving.

Opinion Research Corporation in Princeton, N.J., discovered that 92 percent of the individuals surveyed believe that fresh vegetables pack more vitamins and minerals than frozen. Unless the fruits and vegetables are fresh from your garden, or local markets, frozen will have a higher nutritional value.

According to Barbara Klein. food scientist at the University of Illinois at Urbana:
“Fresh produce may be picked at its peak of nutrition, but during transit time, it is gradually dying, so it has used up the nutrients through its own metabolism.” Within the first 24 hours of harvest, green beans lose 40 percent of their vitamin C content. Other fruits and vegetables suffer similar vitamin loss over time.

 "Why Does AC LaRocco Use Real Cheese?"

AC LaRocco has chosen to use Real Skim Milk Mozzarella. The reasons are flavor, freezing & baking characteristics. It also contains lower fat than whole milk cheese. Numerous non-dairy cheeses have been tested and evaluated, however none have been accepted by our consumer taste test panel.

"Is Rennet Enzyme Used In Cheese?"

AC LaRocco does not permit their cheese manufacturers to use Rennet. There is no animal rennet or hormones in our cheeses. Rennet is an enzyme that was widely used in the processing of mozzarella cheese prior to the 1990s. Its function was to curdle milk. The rennet enzymes used were found in the stomach lining of nursing baby calves. Thanks to a campaign against the use of rennet, new non-animal base enzymes have been developed that are as effective and affordable for cheese makers.

"What is Inulin?"

Inulin is the dietary fiber found naturally in fruits and vegetables. Not only does inulin aid in the metabolism of carbohydrates and calories, new studies indicate that it may also play an integral role in digestive health by increasing dietary fiber and prebiotic "good" bacteria in the intestinal tract. The two AC Larocco thin crust pizzas have inulin in the crust, which gives it higher fiber even though the crust is thin.
